Over 57% of children lack sufficient vitamin A, and vitamin D, causing deficiencies that are prevalent among pregnant women and children. Since vitamins A and D are fat-soluble, fortifying oils and fats with these nutrients is an effective and practical strategy to address micronutrient deficiencies. This method involves simple blending techniques and does not alter the taste, texture, or any other sensory qualities of the oil. Fortified oils can contribute approximately 25% to 30% of the recommended daily dietary intake for vitamins A and D.
